Buffalo Ranch Salad with Crusted Chicken



  • 1 bag Taylor Farms Buffalo Ranch Chopped Salad
  • ½ cup of Chia or Hemp seeds
  • 1/2 cup almond meal
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • pinch of cayenne pepper
  • 500g boneless, skinless chicken breasts, sliced into 10 cm thick strips
  • 2 large eggs, whisked
  • cooking spray or olive oil


  1. Heat oven to 200 degrees C. Line a baking sheet with parchment paper.
  2. Whisk together hemp or Chia seeds, almond meal, salt, pepper and cayenne in a bowl until evenly combined.
  3. Dip each chicken strip in whisked eggs and shake to let extra egg drip off
  4. Add chicken to seeds mixture until coated
  5. Transfer chicken strips to baking sheet
  6. Lightly spray chicken strips with cooking spray or olive oil
  7. Bake for 15-20 minutes, flip chicken half-way through, until chicken is fully cooked inside
  8. Remove from oven and let cool
  9. Combine salad kit ingredients together and toss
  10. Top salad with sliced crusted chicken breasts
  11. Enjoy!
