Buffalo Ranch Salad with Crusted Chicken
Ingredients
- 1 bag Taylor Farms Buffalo Ranch Chopped Salad
- ½ cup of Chia or Hemp seeds
- 1/2 cup almond meal
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- pinch of cayenne pepper
- 500g boneless, skinless chicken breasts, sliced into 10 cm thick strips
- 2 large eggs, whisked
- cooking spray or olive oil
Directions
- Heat oven to 200 degrees C. Line a baking sheet with parchment paper.
- Whisk together hemp or Chia seeds, almond meal, salt, pepper and cayenne in a bowl until evenly combined.
- Dip each chicken strip in whisked eggs and shake to let extra egg drip off
- Add chicken to seeds mixture until coated
- Transfer chicken strips to baking sheet
- Lightly spray chicken strips with cooking spray or olive oil
- Bake for 15-20 minutes, flip chicken half-way through, until chicken is fully cooked inside
- Remove from oven and let cool
- Combine salad kit ingredients together and toss
- Top salad with sliced crusted chicken breasts
- Enjoy!
